New restaurant openings in Midland and Odessa are always a big deal and finally a restaurant that has been my favorite when I visit Lubbock is opening in Midland soon.

According to the Midland Reporter-Telegram, the Midland location of Blue Sky Texas is located at 3001 W. Loop 250 N and will be opening in the next couple of weeks.

Craig Bingham is the owner of the two locations in Lubbock and the one in Abilene and is happy to bring the franchise to Midland.

“Geographically it made sense to open in Midland,” he said. “This was the only other West Texas town that we haven’t been to that is big enough to support one. We felt the timing was right plus we have a lot of brand recognition in Midland.”

Bingham says everything at Blue Sky is fresh. The patties are made fresh at each location and the buns are baked at a local bakery and there is very few frozen products in the restaurant.

The Midland location will have a nice patio area with a sandbox play area for the kids which is due to be finished by the end of this week.

“It’s a family atmosphere that is casual and fun as well as inexpensive featuring quality food. We are primarily known for our hamburgers, cheeseburgers and all that,” Bingham said. “We have a protein plate that is low carb and salads that are excellent. We have a small variety, but everything we do is fresh.”

The restaurant will be open 6 days a week from 11am-10pm and closed on Sundays.
